Ingredients
Scale
2 cups granulated sugar
1 cup heavy cream
1/2 cup light corn syrup
1/8 tsp salt
1/2 tsp vanilla extract
Butter (for greasing hands and work surface)
Instructions
Prepare Your Workspace: Butter a marble slab, countertop, or large baking sheet generously to prevent sticking. Grease your hands with butter to prepare for the pulling process later.
Make the Candy Base: In a heavy-bottomed saucepan, combine sugar, cream, corn syrup, and salt. Cook over medium heat, stirring constantly, until the sugar completely dissolves. Attach a candy thermometer to the side of the pan and continue cooking without stirring until the mixture reaches 260°F (hard ball stage).
Cool the Mixture: Carefully pour the hot candy mixture onto your prepared buttered surface. Allow it to cool slightly until the mixture is still pliable but comfortable enough to handle.
Pull the Candy: Using buttered hands, begin pulling the candy. Stretch it out, fold it back together, and repeat the process. Continue pulling until the candy becomes opaque and has a creamy, satiny texture. (This process may take 10–15 minutes).
Shape and Set: Form the pulled candy into long ropes. Use buttered scissors to cut the ropes into bite-sized pieces. Allow the candies to cool and set completely before serving or packaging for gifts.
Notes
Make sure to use a candy thermometer for accurate temperature control.
The candy can be flavored with other extracts such as almond or mint for a fun twist!
These make perfect homemade gifts for the holiday season.
