Description

This 15-minute lemony broccolini pasta is a bright, fresh, and comforting dish made with simple ingredients like lemon, garlic, broccolini, and pasta. A weeknight favorite that comes together fast and tastes amazing.


Ingredients

  • 8 ounces spaghetti (or pasta of choice)
  • 1 bunch broccolini (68 ounces), trimmed
  • 3 tablespoons olive oil
  • 3 garlic cloves, thinly sliced
  • Zest of 1 lemon
  • 2 tablespoons lemon juice
  • Salt, to taste
  • Freshly cracked black pepper, to taste
  • 1/4 cup grated parmesan (optional)
  • Pinch of red pepper flakes (optional)


Instructions

  1. Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions.
  2. In the last 2–3 minutes of cooking, add broccolini to the pot with the pasta.
  3. Meanwhile, heat olive oil in a pan over medium heat. Add garlic and sauté until just golden and fragrant.
  4. Drain pasta and broccolini, reserving 1/2 cup of pasta water.
  5. Add drained pasta and broccolini to the pan with garlic oil. Toss to combine.
  6. Stir in lemon zest, lemon juice, and a splash of reserved pasta water. Toss until coated.
  7. Season with salt, pepper, and red pepper flakes if using.
  8. Top with grated parmesan and serve with extra lemon if desired.

Notes

  • Use fresh lemon for best flavor.
  • Don’t overcook the broccolini — it should stay bright and tender.
  • Use pasta water to loosen the sauce and help it cling.
  • This dish tastes great cold as a light pasta salad.
