Ingredients
Scale
- 8 ounces spaghetti (or pasta of choice)
- 1 bunch broccolini (6–8 ounces), trimmed
- 3 tablespoons olive oil
- 3 garlic cloves, thinly sliced
- Zest of 1 lemon
- 2 tablespoons lemon juice
- Salt, to taste
- Freshly cracked black pepper, to taste
- 1/4 cup grated parmesan (optional)
- Pinch of red pepper flakes (optional)
Instructions
- Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions.
- In the last 2–3 minutes of cooking, add broccolini to the pot with the pasta.
- Meanwhile, heat olive oil in a pan over medium heat. Add garlic and sauté until just golden and fragrant.
- Drain pasta and broccolini, reserving 1/2 cup of pasta water.
- Add drained pasta and broccolini to the pan with garlic oil. Toss to combine.
- Stir in lemon zest, lemon juice, and a splash of reserved pasta water. Toss until coated.
- Season with salt, pepper, and red pepper flakes if using.
- Top with grated parmesan and serve with extra lemon if desired.
Notes
- Use fresh lemon for best flavor.
- Don’t overcook the broccolini — it should stay bright and tender.
- Use pasta water to loosen the sauce and help it cling.
- This dish tastes great cold as a light pasta salad.
