Flaky, citrusy air-fried salmon paired with caramelized honey-glazed new potatoes and fresh greens for a quick, balanced meal full of vibrant flavor and satisfying texture.

- 2 salmon fillets (6 oz each)
- 1 pound new potatoes, quartered
- 1 lemon, juiced and zested
- 1 tablespoon honey
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup arugula
- 2 tablespoons fresh dill, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the air fryer to 390°F (200°C) for 3–5 minutes.
- Whisk together lemon juice, zest, honey, garlic, 1 tbsp olive oil, salt, and pepper. Reserve half for salmon.
- Toss potatoes in the remaining marinade and 1 tbsp olive oil.
- Air fry potatoes for 12–15 minutes, shaking halfway through.
- Move potatoes to one side, add salmon, and brush with reserved marinade.
- Air fry both for an additional 7–9 minutes until salmon is flaky and cooked through.
- Plate with arugula and sprinkle fresh dill on top. Serve with extra lemon if desired.
Notes
- Use parchment liners in the air fryer for easier cleanup.
- Let salmon sit at room temp for 10 minutes before cooking.
- Check for doneness at 7 minutes to avoid overcooking.
- Leftovers reheat well in the air fryer or oven.
