Ingredients
- Chestnuts: 1 cup, roasted and chopped
- Mushrooms: 1 1/2 cups, finely chopped
- Onion: 1 small, finely diced
- Garlic Cloves: 2, minced
- Fresh Rosemary: 1 teaspoon, chopped
- Fresh Thyme: 1 teaspoon, leaves only
- Breadcrumbs: 3/4 cup
- Olive Oil: 2 tablespoons
- Vegetable Stock: 1/4 cup
- Soy Sauce: 1 tablespoon
- Ground Black Pepper: 1/2 teaspoon

Instructions
- Preheat air fryer to 375°F (190°C).

- Remove from heat and stir in chestnuts, breadcrumbs, soy sauce, vegetable stock, salt, and pepper. Let cool slightly.
- Shape mixture into small balls.
- Place balls in the air fryer basket, lightly spray with oil, and cook for 10–12 minutes, shaking halfway through, until golden and crisp.
- Garnish with flaky salt and rosemary. Serve warm.
Notes
- Cool the mixture before shaping to help them hold together.
- Mist with oil before air frying for extra crispiness.
- Can be made ahead and reheated easily.
