A comforting Albanian casserole made with tender lamb and a creamy yogurt-egg custard, Tavë Kosi is a traditional dish full of warmth and rich flavor.

- 1.5 pounds lamb shoulder or leg, cut into chunks
- 2 cups plain full-fat yogurt
- 3 large eggs
- 1 tablespoon all-purpose flour
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 teaspoon salt (or to taste)
- ½ teaspoon black pepper
- ½ cup rice (optional)
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a baking dish with butter.
- In a bowl, whisk together yogurt, eggs, and flour until smooth. Season with salt and pepper.
- In a large skillet, melt butter over medium heat. Add lamb and garlic. Brown on all sides. If using rice, stir it in and cook for 2 more minutes.
- Transfer lamb and juices to the baking dish. Pour yogurt mixture over the top.
- Bake uncovered for 45–50 minutes, until the top is golden and set.
- Let rest for 10–15 minutes before slicing and serving.
Notes
- Use full-fat yogurt to prevent curdling and get a rich texture.
- Let the dish rest before serving so the custard can set.
- You can prep the components a day ahead and assemble before baking.
