Description
A cozy and flavorful North Indian dish featuring golden potatoes and tender cauliflower cooked in a spiced tomato-onion masala.

- 3 medium potatoes, peeled and diced into 1-inch cubes
- 1 medium head cauliflower, cut into small florets
- 1 large onion, finely chopped
- 2 medium tomatoes, finely chopped
- 3 cloves garlic, minced
- 1-inch piece ginger, grated
- 1 green chili, slit (optional)
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- 1/2 tsp red chili powder (adjust to taste)
- 1/2 tsp garam masala
- Salt to taste
- 2 tbsp oil
- Handful of fresh cilantro, chopped
Instructions
- Heat 2 tablespoons of oil in a heavy-bottomed skillet over medium heat.
- Add cumin seeds and let them crackle for a few seconds.
- Add chopped onions and sauté until golden.
- Stir in garlic, ginger, and green chili. Cook for 1 minute.
- Add chopped tomatoes, turmeric, coriander, red chili powder, and salt. Cook until oil separates from masala.
- Add diced potatoes. Stir and cover, cooking for 5–6 minutes until slightly tender.
- Add cauliflower florets. Mix gently to coat with masala. Cover and cook for 10–12 minutes, stirring occasionally.
- Uncover and cook for a few more minutes to develop slight browning.
- Sprinkle garam masala and chopped cilantro. Stir gently and serve hot.
Notes
- Use ghee instead of oil for a richer, more traditional flavor.
- Add peas or carrots for extra color and nutrition.
- A squeeze of lemon juice before serving brightens the flavors.
- Great as a filling for wraps or sandwiches.
