    • 1/2 cup brown sugar, packed
    • 2 large eggs

    • 1 1/2 cups unsweetened applesauce
    • 1 cup raisins or chopped nuts (optional)
  • For the Glaze (optional):
    • 1 cup powdered sugar
    • 23 tablespoons milk
    • 1/2 teaspoon vanilla extract

Instructions

  • Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or a 9-inch Bundt pan.
  • Mix the Dry Ingredients:
    • In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves. Set aside.
  • Cream the Butter and Sugars:
    • In a large mixing bowl, use an electric mixer to beat the softened butter, granulated sugar, and brown sugar together until light and fluffy (about 2-3 minutes).
  • Add the Wet Ingredients:
    • Beat in the eggs one at a time, followed by the vanilla extract. Mix in the applesauce until smooth.
  • Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix. Fold in raisins or nuts, if desired.
  • Bake the Cake:
    • Pour the batter into the prepared pan and spread it evenly. Bake for 35-40 minutes (for a 9×13 pan) or 45-50 minutes (for a Bundt pan), or until a toothpick inserted into the center comes out clean.
  • Cool the Cake:
    • Let the cake cool in the pan for 10-15 minutes, then transfer it to a wire rack to cool completely.
  • Make the Glaze (optional):
    • In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle over the cooled cake.
  • Serve:
    • Slice and serve as is, or pair with a dollop of whipped cream or a scoop of vanilla ice cream.

Notes

  • You can also add other spices such as allspice or cardamom for an extra flavor twist.
  • This cake can be served without the glaze if you prefer a less sweet option.
