This Apple Cider Donut Cake is a moist and flavorful treat that perfectly captures the essence of fall. With a sweet and spiced batter, topped with a cinnamon-sugar coating and a buttery glaze, it’s like biting into a warm apple cider donut in cake form!

Ingredients

Scale

For the Cake:

  • 1 (15.25 ounce) box yellow cake mix or spice cake mix (Betty Crocker Yellow Super Moist or Duncan Hines Spice Cake Mix)
  • 1 cup apple cider (NOT apple juice or apple cider vinegar)
  • ½ cup applesauce (cinnamon applesauce works best)
  • 3 large eggs (room temperature)
  • ¼ tsp cinnamon (add more if desired)
  • 1 tbsp brown sugar
  • 1 tsp vanilla extract

For the Cinnamon Sugar Topping:

  • 2 tbsp cinnamon (adjust based on preference)
  • ¼ cup sugar
  • ¼ cup melted butter

Instructions

  • Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  • Prepare the Cake Batter:
    • In a large mixing bowl, beat the dry cake mix, apple cider, applesauce, and eggs together. Add in the cinnamon (¼ tsp), brown sugar, and vanilla extract. Mix until combined.
  • Prepare the Bundt Pan:
    • Grease and flour a bundt pan (Baker’s Joy works great, as it has both grease and flour). Pour the cake batter into the prepared pan.
  • Bake:
    • Place the bundt pan on the center rack and bake for 40-45 minutes. Test doneness by inserting a toothpick into the center of the cake; if it comes out clean, the cake is ready.
  • Cool the Cake:
    • Remove the cake from the oven and allow it to cool on a wire rack for about 20 minutes.
  • Prepare the Cinnamon Sugar Topping:
    • In a separate bowl, mix together the cinnamon and sugar.
  • Top the Cake:
    • Once the cake has cooled, brush the entire surface with melted butter. Sprinkle the cinnamon sugar mixture evenly over the cake until fully coated.
  • Serve and Enjoy:
    • Slice the cake and enjoy the warm, comforting flavors of apple cider and cinnamon!

Notes

  • For a stronger fall flavor, use Duncan Hines Spice Cake Mix instead of yellow cake mix.
  • If you prefer a more intense cinnamon flavor, increase the amount of cinnamon in the batter and topping.
