For the Cake:
- 2 cups all-purpose flour
- 2 cups sugar
- 1 1/2 cups applesauce
- 1/2 cup butter, softened
- 2 eggs
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon vanilla
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground allspice
- 3/4 cup golden raisins or raisins
- 1/2 cup chopped pecans
For the Frosting:
- 1/3 cup butter
- 3 cups powdered sugar
- 1 1/2 teaspoons vanilla
- 2 to 3 tablespoons milk
- 1/4 cup chopped pecans (optional)
Instructions
Prepare the Cake:
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine all cake ingredients (except raisins and pecans). Beat at low speed until moistened, scraping the bowl often.
- Once the mixture is moistened, increase to high speed and beat until smooth, scraping the bowl often.
- Stir in the raisins and 1/2 cup chopped pecans.
- Pour the batter into a greased 9×13-inch baking pan.
- Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely.
Prepare the Frosting:
- In a saucepan, melt 1/3 cup butter over medium heat. Cook, stirring constantly, for 4-6 minutes, or until the butter just starts to turn golden brown. Remove from heat and cool completely.
- In a bowl, combine the browned butter, powdered sugar, and vanilla. Beat at medium speed, gradually adding 2-3 tablespoons of milk until the frosting is smooth and spreadable.
- Frost the cooled cake with the frosting and sprinkle with 1/4 cup chopped pecans if desired.
Notes
- For a lighter frosting, adjust the milk in the frosting until you reach your desired consistency.
- This cake is perfect when served with a cup of coffee or tea.
