Instructions

  1. Prepare the Grits: Bring the chicken or vegetable broth to a boil in a pot. Gradually whisk in the stone-ground grits to prevent lumps. Reduce heat to low and simmer gently, stirring occasionally, until the grits are thick and creamy, about 20-25 minutes. Stir in butter and shredded cheddar cheese until melted and fully incorporated.
  2. Season and Cook the Shrimp: While grits cook, season the peeled shrimp with salt, black pepper, smoked paprika, and cayenne pepper. Heat butter and olive oil in a heavy skillet over medium-high heat. Sauté garlic and onions until fragrant and translucent, about 2-3 minutes. Add shrimp and cook for about 2 minutes per side, or until pink and opaque.
  3. Build the Sauce: After the shrimp are cooked, deglaze the skillet with a splash of lemon juice. Optionally add cooked bacon or andouille sausage to the pan. Stir well to combine and create a flavorful sauce coating the shrimp.
