Soft, sweet, and bursting with blueberries, these Baked Blueberry Fritter Bites are drizzled with a vanilla glaze and baked to golden perfection — no frying needed.


Ingredients

  • 1½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • ⅓ cup granulated sugar
  • 2 large eggs
  • ½ cup buttermilk
  • ¼ cup unsalted butter, melted
  • 1½ teaspoons vanilla extract
  • 1 cup fresh blueberries
  • 1 cup powdered sugar (for glaze)


Instructions

  1. Preheat oven to 375°F (190°C) and grease a mini muffin tin or line with paper liners.
  2. In one bowl, whisk flour, baking powder, baking soda, and sugar.
  3. In another bowl, mix eggs, buttermilk, melted butter, and vanilla extract.
  4. Combine wet and dry ingredients until just mixed. Toss blueberries with a bit of flour and fold into the batter.
  5. Scoop into prepared muffin tin, filling each about ¾ full.
  6. Bake for 12–15 minutes or until golden and a toothpick comes out clean.
  7. Mix powdered sugar with a splash of milk to form a glaze. Drizzle over warm fritters and let set before serving.
