- 4 cod fillets (about 6 oz each)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika (optional)
- 3 tablespoons butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Zest and juice of 1 lemon
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper.
- Pat the cod fillets dry with paper towels. Rub them with olive oil, then season with salt, pepper, and paprika (if using). Arrange in the prepared baking dish.
- Bake the cod for 12–15 minutes, or until it flakes easily with a fork.
- While the cod bakes, prepare the garlic sauce. In a skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
- Stir in the heavy cream and Parmesan cheese, cooking for 2–3 minutes until slightly thickened. Remove from heat and add lemon zest and juice.
- Once the cod is done, spoon the creamy garlic sauce over the fillets. Garnish with chopped parsley and serve immediately.
Notes
- For a dairy-free option, substitute heavy cream and Parmesan with coconut cream and nutritional yeast.
- Serve with steamed vegetables, rice, or a side salad for a complete meal.
