This baked cod recipe is topped with a luscious creamy garlic sauce and a hint of lemon for a refreshing kick. A quick, healthy, and flavorful dinner idea that’s perfect for busy weeknights or elegant dinners.

  • 4 cod fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika (optional)
  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Zest and juice of 1 lemon
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  • Preheat your oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper.
  • Pat the cod fillets dry with paper towels. Rub them with olive oil, then season with salt, pepper, and paprika (if using). Arrange in the prepared baking dish.
  • Bake the cod for 12–15 minutes, or until it flakes easily with a fork.
  • While the cod bakes, prepare the garlic sauce. In a skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
  • Stir in the heavy cream and Parmesan cheese, cooking for 2–3 minutes until slightly thickened. Remove from heat and add lemon zest and juice.
  • Once the cod is done, spoon the creamy garlic sauce over the fillets. Garnish with chopped parsley and serve immediately.

Notes

  • For a dairy-free option, substitute heavy cream and Parmesan with coconut cream and nutritional yeast.
  • Serve with steamed vegetables, rice, or a side salad for a complete meal.
