4 cod fillets (about 6 oz each)
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika (optional)
3 tablespoons butter
4 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
Zest and juice of 1 lemon
2 tablespoons chopped fresh parsley (for garnish)
Instructions
Preheat your oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper.
Pat the cod fillets dry with paper towels. Rub them with olive oil, then season with salt, pepper, and paprika (if using). Arrange in the prepared baking dish.
Bake the cod for 12–15 minutes, or until it flakes easily with a fork.
While the cod bakes, prepare the garlic sauce. In a skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
Stir in the heavy cream and Parmesan cheese, cooking for 2–3 minutes until slightly thickened. Remove from heat and add lemon zest and juice.
Once the cod is done, spoon the creamy garlic sauce over the fillets. Garnish with chopped parsley and serve immediately.
Notes
For a dairy-free option, substitute heavy cream and Parmesan with coconut cream and nutritional yeast.
