These crispy, golden Baked Garlic Parmesan Potato Wedges are a flavorful and satisfying appetizer, side dish, or snack. Coated with a savory blend of garlic powder, Italian seasoning, and Parmesan cheese, they’re the perfect addition to any meal or served with dipping sauces.

  • 4 large Russet potatoes, cut into wedges
  • 2 teaspoons salt
  • 2 teaspoons garlic powder
  • 2 teaspoons Italian seasoning
  • 4 tablespoons olive oil
  • 1/2 cup freshly shredded Parmesan cheese

Instructions

  • Preheat and Prep:
    Preheat your oven to 400°F (200°C). Wash and dry the Russet potatoes thoroughly. Slice each potato in half lengthwise, then cut each half into 3-4 wedges.
  • Season the Wedges:
    Place the potato wedges in a large mixing bowl and drizzle with olive oil. Toss to coat evenly. In a small bowl, mix the salt, garlic powder, and Italian seasoning. Sprinkle the seasoning mix over the potatoes and toss again. Finally, add the Parmesan cheese and toss to coat thoroughly.
  • Arrange and Bake:
    Line a baking sheet with parchment paper or lightly grease it. Arrange the potato wedges in a single layer, skin side down. Bake in the preheated oven for 25-35 minutes, flipping halfway through, until the wedges are golden brown and tender.
  • Garnish and Serve:
    Remove the wedges from the oven and transfer them to a serving platter. Garnish with freshly chopped parsley for an extra touch of flavor and freshness. Serve hot with your favorite dipping sauces.

Notes

For extra crispiness, you can broil the potato wedges for 1-2 minutes at the end of the cooking time. You can also adjust the seasoning to taste, or try adding a pinch of red pepper flakes for some heat.
