Description

Creamy baked goat cheese pasta made with roasted cherry tomatoes, olive oil, garlic, and fresh basil. A comforting and flavorful pasta dish that comes together easily in the oven.


Ingredients

Scale
  • 300 g pasta (penne or rigatoni)
  • 2 cups cherry tomatoes
  • 200 g goat cheese
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh basil, chopped


Instructions

  1. Preheat oven to 400°F.
  2. Place cherry tomatoes in a baking dish and drizzle with olive oil.
  3. Add minced garlic, salt, and black pepper and mix gently.
  4. Place goat cheese in the center of the tomatoes.
  5. Bake for about 25 minutes until tomatoes burst and cheese softens.
  6. Meanwhile cook pasta in salted boiling water until tender.
  7. Drain pasta and reserve a little pasta water.
  8. Mix the roasted tomatoes and melted goat cheese into a creamy sauce.
  9. Add the cooked pasta and toss to coat evenly.
  10. Add fresh basil and adjust texture with reserved pasta water if needed.
  11. Serve warm.

Notes

  • Use ripe cherry tomatoes for best flavor.
  • Mix sauce while hot for smooth texture.
  • Add pasta water to loosen sauce if needed.
  • Serve immediately for creamiest result.
