- 300 g pasta (penne or rigatoni)
- 2 cups cherry tomatoes
- 200 g goat cheese
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh basil, chopped
Instructions
- Preheat oven to 400°F.
- Place cherry tomatoes in a baking dish and drizzle with olive oil.
- Add minced garlic, salt, and black pepper and mix gently.
- Place goat cheese in the center of the tomatoes.
- Bake for about 25 minutes until tomatoes burst and cheese softens.
- Meanwhile cook pasta in salted boiling water until tender.
- Drain pasta and reserve a little pasta water.
- Mix the roasted tomatoes and melted goat cheese into a creamy sauce.
- Add the cooked pasta and toss to coat evenly.
- Add fresh basil and adjust texture with reserved pasta water if needed.
- Serve warm.

- Use ripe cherry tomatoes for best flavor.
- Mix sauce while hot for smooth texture.
- Add pasta water to loosen sauce if needed.
- Serve immediately for creamiest result.
