Description

A comforting classic dessert made with eggs, milk, cooked rice, raisins, and sugar. This creamy, sweet pudding is baked to perfection and finished with a sprinkle of cinnamon.


Ingredients

  • 3 slightly beaten eggs
  • 2 cups milk
  • 1 1/2 cups cooked rice
  • 1/2 cup sugar
  • 1/2 cup raisins
  • 1 teaspoon vanilla
  • Cinnamon (for sprinkling)


Instructions

  • Preheat your oven to 325°F (160°C).
  • In a bowl, combine the slightly beaten eggs, milk, cooked rice, sugar, raisins, vanilla, and 1/2 teaspoon salt. Mix well.
  • Pour the mixture into a 10x6x2-inch baking dish.
  • Bake for 25 minutes, then stir the pudding.
  • Sprinkle the top with cinnamon, and continue baking for an additional 20-25 minutes, or until a knife inserted near the center comes out clean.
  • Serve warm or chilled with light cream, if desired.

Notes

  • For a richer version, you can substitute whole milk with heavy cream or half-and-half.
