- 3 slightly beaten eggs
- 2 cups milk
- 1 1/2 cups cooked rice
- 1/2 cup sugar
- 1/2 cup raisins
- 1 teaspoon vanilla
- Cinnamon (for sprinkling)
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, combine the slightly beaten eggs, milk, cooked rice, sugar, raisins, vanilla, and 1/2 teaspoon salt. Mix well.
- Pour the mixture into a 10x6x2-inch baking dish.
- Bake for 25 minutes, then stir the pudding.
- Sprinkle the top with cinnamon, and continue baking for an additional 20-25 minutes, or until a knife inserted near the center comes out clean.
- Serve warm or chilled with light cream, if desired.
Notes
- For a richer version, you can substitute whole milk with heavy cream or half-and-half.
- This dish can be enjoyed both warm and cold, depending on preference.
