Ingredients

  • 3 large ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 8 ounces cream cheese, softened
  • 2 cups powdered sugar
  • 1 tablespoon lemon juice


Instructions

  1. Preheat oven to 350°F and grease a 9×13-inch baking pan.
  2. In a bowl, whisk together flour, baking soda, cinnamon, and salt.
  3. In another bowl, cream butter and brown sugar until fluffy.
  4. Add eggs, mashed bananas, and vanilla to the butter mixture and mix well.
  5. Gradually add dry ingredients and mix until just combined.
  6. Pour batter into the prepared pan and smooth the top.
  7. Bake for 30–35 minutes or until a toothpick comes out clean.
  8. Let cake cool completely before frosting.
  9. To make the frosting, beat cream cheese until smooth. Add powdered sugar, lemon juice, and vanilla and beat until creamy.
  10. Spread frosting over cooled cake and top with fresh banana slices if desired.
