This flavorful Beef and Pepper Rice Bowl combines tender ground beef with sautéed onions, bell peppers, and jalapeño, all seasoned with soy sauce and spices. Served over rice, it’s a hearty and satisfying meal that’s perfect for any night of the week.

Ingredients

Scale
  • 2 tablespoons butter
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 jalapeño, diced
  • 1 pound ground beef
  • ½ cup soy sauce (low sodium optional)
  • 1 tablespoon garlic powder
  • 1 teaspoon salt
  • 2 teaspoons black pepper
  • Optional: Cooked rice, for serving

Instructions

  1. Sauté Vegetables: In a large skillet over medium heat, melt the butter. Add the diced onion, green bell pepper, red bell pepper, and jalapeño. Sauté for 4-5 minutes, stirring occasionally, until the vegetables soften and become fragrant.
  2. Cook Ground Beef: Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon as it cooks. Drain any excess fat for a leaner dish.
  3. Season: Stir in the soy sauce, garlic powder, salt, and black pepper. Mix well and cook for an additional 2-3 minutes to allow the flavors to meld together.
  4. Serve: Serve the beef and pepper mixture over cooked rice for a hearty and flavorful meal, if desired.

Notes

  • For a lighter option, use lean ground turkey or chicken in place of beef.
  • Customize the heat level by adjusting the amount of jalapeño or adding more spices.
  • If desired, top with chopped fresh cilantro or a squeeze of lime for extra flavor.
