  • 2 boiled beets, sliced finely
  • 3 boiled carrots, grated
  • 250 g strained yogurt
  • A pinch of fresh parsley, finely chopped
  • 78 walnuts, chopped
  • 1 clove garlic, minced
  • Salt, to taste
  • Black pepper, to taste
  • Chili pepper, to taste

Instructions

  1. Prepare the Vegetables:

    • Slice the boiled beets finely using a sharp knife or mandoline for even thickness.
    • Grate the boiled carrots and set aside.
  2. Make the Yogurt Mixture:

    • In a bowl, mix the strained yogurt with minced garlic, chopped walnuts, parsley, and spices (salt, black pepper, and chili pepper).
  3. Assemble the Rolls:

    • Lay out a piece of stretch film on a flat surface.
    • Arrange the beet slices slightly overlapping to form a rectangular base.
    • Spread a layer of the yogurt mixture evenly over the beet slices.
    • Add the grated carrots on top of the yogurt layer.
  4. Roll and Rest:

    • Gently roll the beets using the stretch film to create a tight roll.
    • Secure the ends of the stretch film and refrigerate for at least 30 minutes to set.
  5. Slice and Serve:

    • Remove the roll from the stretch film. Slice into 1-inch pieces and arrange on a serving platter.
