Description

A decadent cheesecake layered with a buttery Golden Oreo crust, creamy cheesecake filling, fresh strawberry gelatin topping, and a sweet strawberry crunch crumble. Perfect for berry lovers and special occasions.

  • For the crust:
  • 24 Golden Oreos, crushed
  • 5 tablespoons butter, melted
  • For the filling:
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • For the strawberry topping:
  • 1 box (3 oz) strawberry Jell-O
  • 1 cup boiling water
  • 1 cup chopped fresh strawberries
  • For the crunch topping:
  • 12 Golden Oreos, crushed
  • 1 tablespoon butter, melted
  • 1 box strawberry Jell-O powder (dry)


Instructions

  1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan and wrap the outside with foil to prevent leaks.
  2. In a bowl, mix the crushed Golden Oreos and melted butter for the crust until combined. Press firmly into the bottom of the prepared pan. Bake for 10 minutes, then set aside to cool.
  3. In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy. Add the vanilla extract and mix well.
  4. Beat in the eggs one at a time, mixing on low speed until just incorporated. Stir in the sour cream until smooth.
  5. Pour the cheesecake batter over the cooled crust. Place the springform pan in a larger roasting pan and add hot water to the roasting pan until it reaches halfway up the sides of the cheesecake pan.
  6. Bake for 55–65 minutes, or until the center is just set and slightly jiggly. Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour.
  7. Remove cheesecake from oven and refrigerate for at least 4 hours, or overnight.
  8. For the strawberry topping: In a bowl, dissolve the strawberry Jell-O in boiling water. Allow to cool for 15 minutes, then stir in chopped strawberries. Pour over chilled cheesecake and refrigerate until set, about 1–2 hours.
  9. For the crunch topping: Combine crushed Golden Oreos, melted butter, and dry strawberry Jell-O powder. Sprinkle evenly over the strawberry topping before serving.

  • Do not overmix after adding eggs to prevent cracks.
