A no-bake strawberry cheesecake with a sweet, creamy filling and a crunchy strawberry shortcake-inspired topping.

Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 3 tbsp sugar
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 1 box strawberry gelatin (3 oz)
  • 1 cup crushed Golden Oreos
  • 1/2 cup freeze-dried strawberries, crushed
  • Fresh strawberries for garnish

Instructions

  1. In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press into the bottom of a springform pan. Chill in fridge.
  2. In a large bowl, beat cream cheese until smooth. Add powdered sugar and vanilla extract, mixing well.
  3. In a separate bowl, whip heavy cream until stiff peaks form. Gently fold into the cream cheese mixture.
  4. Pour the filling over the crust and smooth the top. Chill for at least 4 hours or overnight.
  5. In a small bowl, mix strawberry gelatin, crushed Golden Oreos, and freeze-dried strawberries to make the crunch topping.
  6. Sprinkle topping over the cheesecake before serving. Garnish with fresh strawberries.

Notes

  • Use a food processor to finely crush Oreos and freeze-dried strawberries.
  • Chill the cheesecake overnight for best texture.
  • Optional: drizzle with strawberry syrup for extra flavor.
