This gluten free meatloaf is tender, juicy, and full of comforting flavor. Made with oats instead of breadcrumbs and topped with a sweet ketchup glaze, it’s a cozy classic everyone can enjoy.

- 1 ½ pounds ground beef
- ¾ cup gluten-free oats
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- ½ cup ketchup (divided)
- 2 large eggs
- ¼ cup milk
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat oven to 375°F and grease or line a loaf pan with parchment paper.
- In a large bowl, combine ground beef, oats, onion, garlic, ¼ cup ketchup, eggs, milk, Worcestershire sauce, salt, pepper, and parsley. Mix until just combined.
- Transfer the mixture into the loaf pan and press it evenly.
- Spread remaining ¼ cup ketchup over the top of the loaf.
- Bake for 50 to 60 minutes, or until internal temperature reaches 160°F.
- Remove from oven and let rest for 10 minutes before slicing.
- Serve warm and enjoy!
Notes
- Make sure oats are certified gluten free.
- Do not overmix the meat to avoid a dense loaf.
- Broil for 2 minutes at the end for a crispier glaze.
- Can be made ahead and refrigerated before baking.
