Description

This gluten free meatloaf is tender, juicy, and full of comforting flavor. Made with oats instead of breadcrumbs and topped with a sweet ketchup glaze, it’s a cozy classic everyone can enjoy.


Ingredients

  • 1 ½ pounds ground beef
  • ¾ cup gluten-free oats
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • ½ cup ketchup (divided)
  • 2 large eggs
  • ¼ cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Preheat oven to 375°F and grease or line a loaf pan with parchment paper.
  2. In a large bowl, combine ground beef, oats, onion, garlic, ¼ cup ketchup, eggs, milk, Worcestershire sauce, salt, pepper, and parsley. Mix until just combined.
  3. Transfer the mixture into the loaf pan and press it evenly.
  4. Spread remaining ¼ cup ketchup over the top of the loaf.
  5. Bake for 50 to 60 minutes, or until internal temperature reaches 160°F.
  6. Remove from oven and let rest for 10 minutes before slicing.
  7. Serve warm and enjoy!

Notes

  • Make sure oats are certified gluten free.
  • Do not overmix the meat to avoid a dense loaf.
  • Broil for 2 minutes at the end for a crispier glaze.
  • Can be made ahead and refrigerated before baking.
