Biscoff Blondies are rich, chewy cookie bars loaded with creamy Biscoff spread, crunchy Biscoff cookies, and sweet white chocolate chips, making for an irresistible dessert everyone will love.

Ingredients

Scale
  • Wet Ingredients:
  • 1 stick (1/2 cup) butter, melted (browning optional)
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1/2 cup Biscoff spread
  • 1/2 cup roughly crushed Biscoff cookies
  • Dry Ingredients:
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup white chocolate chips
  • Topping:
  • Extra crushed Biscoff cookies for garnish

Instructions

  1. Prepare the Wet Ingredients: Melt the butter over medium heat. For a nutty flavor, let it brown slightly before removing from heat. Cool for a few minutes.
  2. Mix the Base: In a large mixing bowl, combine melted butter, brown sugar, and eggs. Whisk until smooth and creamy. Add Biscoff spread and mix until fully incorporated. Stir in crushed Biscoff cookies.
  3. Incorporate the Dry Ingredients: Gradually add flour, baking powder, and salt to the wet mixture. Stir gently until just combined. Fold in white chocolate chips.
  4. Assemble and Bake: Line an 8×8-inch baking pan with parchment paper or lightly grease it. Pour the batter into the pan, spreading evenly. Sprinkle extra crushed Biscoff cookies on top.
  5. Bake: Preheat oven to 350°F (175°C). Bake for 28 minutes, or until the top is golden and a toothpick inserted in the center comes out with a few moist crumbs.
  6. Cool and Serve: Allow blondies to cool in the pan for at least 15 minutes before cutting. For best texture, let them cool completely before slicing into squares and serving.

Notes

  • Browning the butter adds depth and a nutty flavor.
  • Don’t overmix the batter for fudgy blondies.
  • Store leftovers in an airtight container for up to 4 days.
  • Can be frozen for up to 2 months.
