These delicious cupcakes are a perfect blend of tangy lime and sweet blackberries. Filled with a smooth cream cheese filling and topped with a zesty lime frosting, they are sure to be a hit at any gathering.

  • For the Cupcakes:
    • 1 1/2 cups all-purpose flour
    • 1 tsp baking powder
    • 1/2 tsp baking soda
    • 1/4 tsp salt
    • 1/2 cup unsalted butter, softened
    • 1/4 cup granulated sugar
    • 2 large eggs
    • 1 tsp vanilla extract
    • 1/2 cup buttermilk
    • 1/2 cup fresh blackberries, chopped
  • For the Cream Cheese Filling:
    • 1 cup cream cheese, softened
    • 1/4 cup unsalted butter, softened
    • 1/4 cup powdered sugar
    • 1 tsp vanilla extract
    • Zest of 1 lime
    • 2 tbsp lime juice
  • Garnish:
    • Fresh blackberries
    • Lime zest

Instructions

  • Preheat Oven:
    Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  • Mix Dry Ingredients:
    In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Prepare Wet Ingredients:
    In a large bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  • Combine Wet and Dry:
    Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, starting and ending with the dry ingredients. Gently fold in the chopped blackberries.
  • Fill Cupcake Liners:
    Divide the batter evenly among the cupcake liners, filling each about two-thirds full. Press a small dollop of cream cheese filling into the center of each cupcake.
  • Bake:
    Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely on a wire rack.
  • Make the Frosting:
    Beat the softened cream cheese and butter until smooth. Gradually add powdered sugar, beating until light and fluffy. Mix in vanilla extract, lime zest, and lime juice until well combined.
  • Frost & Garnish:
    Frost the cooled cupcakes with the cream cheese frosting. Drizzle with a bit of extra lime juice, sprinkle with lime zest, and top each cupcake with a fresh blackberry for garnish.

Notes

  • You can adjust the sweetness of the frosting by adding more or less powdered sugar, depending on your taste preference.
  • If you don’t have buttermilk, you can substitute with milk and a splash of lemon juice or vinegar.
