For the Cupcakes:
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda

- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 1/2 cup fresh blackberries, chopped

Instructions

Preheat Oven:
Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners. -
Mix Dry Ingredients:
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. -
Prepare Wet Ingredients:
In a large bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract. -
Combine Wet and Dry:
Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, starting and ending with the dry ingredients. Gently fold in the chopped blackberries. -
Fill Cupcake Liners:
Divide the batter evenly among the cupcake liners, filling each about two-thirds full. Press a small dollop of cream cheese filling into the center of each cupcake. -
Bake:
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely on a wire rack. -
Make the Frosting:
Beat the softened cream cheese and butter until smooth. Gradually add powdered sugar, beating until light and fluffy. Mix in vanilla extract, lime zest, and lime juice until well combined. -
Frost & Garnish:
Frost the cooled cupcakes with the cream cheese frosting. Drizzle with a bit of extra lime juice, sprinkle with lime zest, and top each cupcake with a fresh blackberry for garnish.
Notes
- You can adjust the sweetness of the frosting by adding more or less powdered sugar, depending on your taste preference.
- If you don’t have buttermilk, you can substitute with milk and a splash of lemon juice or vinegar.
