- 1 pound lean ground beef
- 1 cup cooked white beans, mashed
- 1 cup grated yellow squash, squeezed dry
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 4 whole wheat burger buns
- 1 large tomato, sliced
- 4 lettuce leaves
Instructions
- Heat a skillet or grill pan over medium heat and drizzle with olive oil.
- In a large bowl, combine ground beef, mashed beans, grated squash, garlic, parsley, salt, and pepper until just mixed.
- Form into 4 equal-sized patties and chill for 15 minutes to firm up.
- Cook patties for 4–5 minutes per side until browned and cooked through.
- Lightly toast buns and layer with lettuce, tomato, and a cooked patty.
- Add desired sauces and serve warm.
Notes
- Chill patties before cooking to help them hold shape.
- Do not overmix to keep texture tender.
- Squeeze squash well to remove excess moisture.
