This Blooming Quesadilla Ring is a fun and flavorful twist on traditional quesadillas! Filled with melted cheese, savory chicken, and flavorful spices, it’s perfect for parties, gatherings, or a fun family dinner.

Ingredients

Scale
  • 4 large flour tortillas
  • 2 cups shredded rotisserie chicken (or cooked chicken breast)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup cream cheese, softened
  • 1 tablespoon taco seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1 tablespoon olive oil (for brushing)
  • 1/4 cup chopped fresh cilantro (optional, for garnish)
  • Salsa and sour cream, for dipping (optional)

Instructions

  • Preheat the oven to 375°F (190°C).
  • Lay one flour tortilla flat on a baking sheet. Spread cream cheese evenly over the tortilla.
  • In a medium bowl, mix the shredded chicken, cheddar cheese, Monterey Jack cheese, taco seasoning, garlic powder, and cumin.
  • Spread the chicken and cheese mixture evenly over the cream cheese layer.
  • Place the second tortilla on top of the filling and press down gently to seal. Repeat the process with the remaining tortillas and filling, creating a stacked, layered structure.
  • Carefully cut the stacked tortillas into a ring shape by making a small hole in the center and cutting outward to form a large ring.
  • Brush the top of the quesadilla ring with olive oil to ensure a golden, crispy texture.
  • Place the quesadilla ring in the oven and bake for 20-25 minutes, or until the cheese is melted, and the edges are golden brown and crispy.
  • Remove from the oven and let it cool slightly before cutting. Garnish with chopped cilantro (optional).
  • Serve with salsa, sour cream, or your favorite dipping sauces.

Notes

  • You can substitute the chicken with beef, pork, or beans for a vegetarian option.
  • Add chopped onions, bell peppers, or olives to the chicken mixture for added flavor.
  • Serve with your favorite Mexican side dishes like guacamole or chips.
