- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 3 large eggs
- 2 teaspoons vanilla extract
- 1/2 cup milk
- 1 cup fresh blueberries (for glaze)
- 1 1/2 cups powdered sugar
- 2 tablespoons lemon juice
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round or bundt pan.
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, cream butter and sugar until fluffy. Add eggs one at a time, then vanilla.
- Alternate adding dry ingredients and milk to the butter mixture, mixing gently until just combined.
- Pour batter into prepared pan and smooth the top.
- Bake for 40–45 minutes or until a toothpick comes out clean. Cool 10 minutes in pan, then turn out onto a wire rack to cool completely.
- For the glaze, simmer blueberries, lemon juice, and 2 tablespoons water in a saucepan until berries burst. Mash and cook 5 minutes.
- Strain blueberry mixture, then whisk in powdered sugar until smooth.
- Drizzle glaze over completely cooled cake. Garnish with blueberries or mint if desired.
Notes
- Make sure the cake is fully cooled before glazing to avoid melting.
- Adjust glaze thickness by adding more sugar or a splash of water as needed.
- Glaze can be made ahead and refrigerated.
