Description

Spicy, cheesy, and golden-crisp, this Bombay Chilli Cheese Toastie combines mashed potatoes, green chillies, and melty cheese between buttery grilled bread — a Mumbai street food favorite made at home.


Ingredients

  • 4 slices white bread
  • 2 medium boiled potatoes, mashed
  • 1 cup grated cheese (processed cheese or cheddar)
  • 12 green chillies, finely chopped
  • 2 tablespoons fresh coriander, chopped
  • 1 small red onion, finely chopped
  • 2 tablespoons butter, softened
  • 1/2 teaspoon chaat masala (optional)
  • Salt and black pepper, to taste


Instructions

  1. Heat a non-stick pan or sandwich press over medium heat.
  2. In a bowl, mash the potatoes and mix with chopped onion, chillies, coriander, chaat masala, salt, and pepper.
  3. Spread butter on one side of each bread slice.
  4. Place two slices butter-side down on a surface. Spread the filling on top and sprinkle with grated cheese.
  5. Top with remaining slices, butter-side facing up.
  6. Grill in the pan or press for 3–4 minutes per side until golden and cheese is melted.
  7. Let rest briefly, then slice and serve hot with chutney or ketchup.

Notes

  • Use processed cheese for best melt and nostalgic flavor.
  • Press gently with a spatula for a crispier toastie.
  • Adjust chilli quantity based on your spice preference.
