Spicy, cheesy, and golden-crisp, this Bombay Chilli Cheese Toastie combines mashed potatoes, green chillies, and melty cheese between buttery grilled bread — a Mumbai street food favorite made at home.

- 4 slices white bread
- 2 medium boiled potatoes, mashed
- 1 cup grated cheese (processed cheese or cheddar)
- 1–2 green chillies, finely chopped
- 2 tablespoons fresh coriander, chopped
- 1 small red onion, finely chopped
- 2 tablespoons butter, softened
- 1/2 teaspoon chaat masala (optional)
- Salt and black pepper, to taste
Instructions
- Heat a non-stick pan or sandwich press over medium heat.
- In a bowl, mash the potatoes and mix with chopped onion, chillies, coriander, chaat masala, salt, and pepper.
- Spread butter on one side of each bread slice.
- Place two slices butter-side down on a surface. Spread the filling on top and sprinkle with grated cheese.
- Top with remaining slices, butter-side facing up.
- Grill in the pan or press for 3–4 minutes per side until golden and cheese is melted.
- Let rest briefly, then slice and serve hot with chutney or ketchup.
Notes
- Use processed cheese for best melt and nostalgic flavor.
- Press gently with a spatula for a crispier toastie.
