Description

A hearty and satisfying breakfast featuring a bagel with a delicious avocado spread, crispy streaky bacon, halloumi, and a perfectly cooked egg in the hole. Topped with fresh chives, this meal is sure to kick-start your day.


Ingredients

  • Avocado: 1 ripe avocado
  • Bagels: 2 bagels
  • Red pepper flakes: 1 teaspoon
  • Streaky bacon: 4 slices
  • Halloumi: 100g (about 4 slices)
  • Fresh chives: A handful, chopped
  • Lemon: Juice of half a lemon
  • Sea salt: To taste
  • Cracked black pepper: To taste
  • Eggs: 2 eggs


Instructions

  • Cook bacon and halloumi: In a skillet, cook the streaky bacon until crispy. At the same time, cook the halloumi slices in the skillet until golden brown on both sides. Set both aside.
  • Prepare avocado: Mash the avocado in a bowl and add lemon juice, red pepper flakes, sea salt, and cracked black pepper. Mix well.
  • Assemble bagel: Slice the bagels in half. Spread the mashed avocado mixture generously on the bottom half of each bagel. Top with streaky bacon and halloumi.
  • Make egg in the hole: Using a spoon, create a small hole in the center of the bagel’s top half. Crack an egg into the hole of each bagel.
  • Air fry: Preheat your air fryer to 190°C (375°F). Place the assembled bagels in the air fryer and cook for 5 minutes, or until the egg is set to your desired consistency.
  • Serve: Once cooked, remove the bagels from the air fryer and top with freshly chopped chives. Serve immediately.

Notes

  • You can adjust the amount of red pepper flakes to suit your spice preference.
  • If you don’t have an air fryer, you can also cook the egg in the hole in a skillet by carefully cracking the egg into the hole and cooking on medium heat until the egg white is set.
  • For extra flavor, consider adding a drizzle of hot sauce or a sprinkle of cheese on top before cooking.
