This Breakfast Bundt Cake is a delicious and comforting treat, perfect for starting your day or enjoying with a cup of coffee. Fluffy and lightly spiced, it’s made with apples (or your favorite fruit) and topped with a light dusting of powdered sugar. A perfect combination of sweetness and flavor!

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg (optional)
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup finely chopped apples (or another fruit of your choice, like berries or bananas)
  • 1/2 cup chopped walnuts or pecans (optional)
  • Powdered sugar for dusting (optional)

Instructions

  • Preheat Oven:
Preheat your oven to 350°F (175°C) and grease a 10-inch bundt pan with butter or cooking spray. Lightly flour the pan to prevent sticking.
  • Combine Dry Ingredients:
In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg (if using).
  • Combine Wet Ingredients:
In another bowl, beat the softened butter, milk, eggs, and vanilla extract until smooth and well combined.
  • Combine Wet and Dry Ingredients:
Gradually add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
  • Add Fruit and Nuts:
Gently fold in the chopped apples (or fruit of choice) and nuts (if using).
  • Pour and Bake:
Pour the batter into the prepared bundt pan, smoothing it out evenly. Bake for 35-45 minutes or until a toothpick inserted into the center comes out clean.
  • Cool:
Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  • Dust with Powdered Sugar:
Once cooled, dust with powdered sugar if desired, and serve.

Notes

  • For a more indulgent treat, try adding a cream cheese glaze or frosting.
  • You can swap out the apples for other fruits like berries or bananas for variety.
  • This cake makes a great breakfast or dessert!
