These broccoli cheese balls are a delicious and easy appetizer or snack. They’re crispy on the outside, gooey and cheesy on the inside, and loaded with broccoli goodness! Perfect for parties, gatherings, or just a savory snack.

Ingredients

  • 2 cups cooked and finely chopped broccoli (steamed or blanched)
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup breadcrumbs (plus extra for coating)
  • 2 large eggs, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika (optional)
  • Salt and pepper to taste
  • Olive oil or cooking spray for baking

Instructions

  • Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  • Prepare the Mixture: In a large mixing bowl, combine the chopped broccoli, cheddar cheese, Parmesan cheese, breadcrumbs, and beaten eggs. Add garlic powder, onion powder, paprika (if using), salt, and pepper. Mix until everything is well combined and holds together.
  • Form the Balls: Using your hands, scoop about a tablespoon of the mixture and roll it into a ball. If the mixture feels too wet, add a little more breadcrumbs. Roll each ball in extra breadcrumbs for a crispy coating.
  • Bake the Balls: Place the broccoli cheese balls on the prepared baking sheet. Lightly spray or brush the tops with olive oil to help them crisp up. Bake for 18-20 minutes, or until the balls are golden brown and crispy.
  • Serve: Remove from the oven and let them cool slightly. Serve warm with your favorite dipping sauce, like ranch, marinara, or garlic aioli.

Notes

  • Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or microwave before serving.
  • For a healthier alternative, you can bake them in an air fryer at 375°F for 12-15 minutes for a crispy texture without using oil.
  • These can be made ahead of time and frozen before baking. Simply freeze them in a single layer and bake from frozen when ready to serve.
