Description

These classic buckeyes are a rich and creamy peanut butter center dipped in chocolate—just like a peanut butter cup but even better. A no-bake treat that’s perfect for holidays, parties, and snacking all year round.


Ingredients

  • 1 1/2 cups creamy peanut butter
  • 3 1/2 cups powdered sugar
  • 1/2 cup butter, softened
  • 1 teaspoon vanilla extract
  • 2 cups semi-sweet chocolate chips


Instructions

  1. Line a baking sheet with parchment paper and set aside.
  2. In a large mixing bowl, beat together peanut butter, softened butter, and vanilla until smooth.
  3. Gradually mix in powdered sugar until a stiff dough forms.
  4. Roll dough into tablespoon-sized balls and place on the prepared baking sheet.
  5. Refrigerate for 30 minutes or until firm.
  6. In a microwave-safe bowl or double boiler, melt the chocolate chips until smooth.
  7. Insert a toothpick into each chilled peanut butter ball and dip into melted chocolate, leaving a small circle of peanut butter visible at the top.
  8. Return dipped buckeyes to the baking sheet and smooth over the toothpick hole if desired.
  9. Chill until chocolate is set, then store in an airtight container in the fridge.

Notes

  • Use shelf-stable, no-stir peanut butter for best consistency.
  • Add a pinch of salt to the dough for deeper flavor.
  • For a glossy finish, stir in a bit of coconut oil when melting the chocolate.
