These classic buckeyes are a rich and creamy peanut butter center dipped in chocolate—just like a peanut butter cup but even better. A no-bake treat that’s perfect for holidays, parties, and snacking all year round.

- 1 1/2 cups creamy peanut butter
- 3 1/2 cups powdered sugar
- 1/2 cup butter, softened
- 1 teaspoon vanilla extract
- 2 cups semi-sweet chocolate chips
Instructions
- Line a baking sheet with parchment paper and set aside.
- In a large mixing bowl, beat together peanut butter, softened butter, and vanilla until smooth.
- Gradually mix in powdered sugar until a stiff dough forms.
- Roll dough into tablespoon-sized balls and place on the prepared baking sheet.
- Refrigerate for 30 minutes or until firm.
- In a microwave-safe bowl or double boiler, melt the chocolate chips until smooth.
- Insert a toothpick into each chilled peanut butter ball and dip into melted chocolate, leaving a small circle of peanut butter visible at the top.
- Return dipped buckeyes to the baking sheet and smooth over the toothpick hole if desired.
- Chill until chocolate is set, then store in an airtight container in the fridge.
Notes
- Use shelf-stable, no-stir peanut butter for best consistency.
- Add a pinch of salt to the dough for deeper flavor.
- For a glossy finish, stir in a bit of coconut oil when melting the chocolate.
