Description

A rich and smoky butter bean and chorizo stew simmered in a tomato base with garlic, onion, and paprika. Creamy beans soak up bold flavors, creating a hearty and comforting one-pot meal.

  • 8 ounces chorizo sausage, sliced into rounds
  • 2 (15-ounce) cans butter beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 1 (14-ounce) can diced tomatoes
  • 1 cup chicken broth
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Heat a large Dutch oven over medium heat.
  2. Add olive oil and sliced chorizo. Cook for 4 to 5 minutes until lightly browned and fragrant.
  3. Add chopped onion and sauté for 4 minutes until softened.
  4. Stir in minced garlic and smoked paprika and cook for 1 minute.
  5. Pour in diced tomatoes and chicken broth. Stir to combine and bring to a gentle simmer.
  6. Add drained butter beans, salt, and black pepper.
  7. Simmer uncovered for 15 to 20 minutes, stirring occasionally, until slightly thickened.
  8. Taste and adjust seasoning if needed.
  9. Stir in fresh parsley.
  10. Serve hot.

  • Brown the chorizo well to build deeper flavor.
  • Simmer gently to keep the beans intact.
  • Taste before adding extra salt since chorizo can be salty.
