- 1 (14-ounce) can diced tomatoes
- 1 cup chicken broth
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat a large Dutch oven over medium heat.
- Add olive oil and sliced chorizo. Cook for 4 to 5 minutes until lightly browned and fragrant.
- Add chopped onion and sauté for 4 minutes until softened.
- Stir in minced garlic and smoked paprika and cook for 1 minute.
- Pour in diced tomatoes and chicken broth. Stir to combine and bring to a gentle simmer.
- Add drained butter beans, salt, and black pepper.
- Simmer uncovered for 15 to 20 minutes, stirring occasionally, until slightly thickened.
- Taste and adjust seasoning if needed.
- Stir in fresh parsley.
- Serve hot.
