- 1 cup breadcrumbs
- 2 large eggs
- 3 tablespoons olive oil
- 3 cups green cabbage, finely shredded
- 2 cups romaine lettuce, thinly sliced
- 1 cup Caesar dressing
- 1 cup croutons
- 1/2 cup grated hard cheese
- 1/2 teaspoon black pepper
Instructions
- Heat a large skillet over medium heat and add the olive oil.
- Place the beaten eggs in one bowl and the breadcrumbs in another.
- Dip each chicken cutlet into the eggs, then coat evenly with breadcrumbs.
- Pan fry the chicken for 4 to 5 minutes per side until golden and cooked through.
- Remove the chicken from the pan, let it rest briefly, then slice.
- In a large bowl, toss the cabbage and romaine with the Caesar dressing.
- Add the croutons and grated cheese, mixing gently.
- Top with sliced crunchy chicken and finish with black pepper before serving.

- Let the chicken rest before slicing for juicier results.
