Description

This Cajun White Chicken Chili is the perfect mix of comfort and spice! Loaded with tender chicken, white beans, and Cajun seasoning, it’s a hearty, flavorful dish to warm your soul. Garnish with green onions for a fresh kick. A must-try for chili lovers!

Ingredients

Scale
  • 1 lb chicken breast, cooked and shredded
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium bell pepper, chopped
  • 2 cups chicken broth
  • 1 tbsp Cajun seasoning
  • Salt and pepper, to taste
  • Olive oil, for cooking
  • Chopped green onions, for garnish

Instructions

  1. Sauté Vegetables:
    • Heat a splash of olive oil in a large pot over medium heat.
    • Add the chopped onion, bell pepper, and minced garlic. Sauté until softened, about 5 minutes.
  2. Combine Ingredients:
    • Pour in the chicken broth, then add the diced tomatoes, white beans, and shredded chicken. Stir well to combine.
  3. Season:
    • Sprinkle in the Cajun seasoning. Stir to distribute the spices evenly.
  4. Simmer:
    • Bring the mixture to a boil, then reduce the heat to low. Let it simmer for 20–30 minutes to allow the flavors to meld together.
  5. Taste & Serve:
    • Season with salt and pepper to taste.
    • Serve hot, garnished with freshly chopped green onions for added flavor.

Notes

  • For a creamier chili, stir in 1/2 cup of heavy cream or Greek yogurt at the end.
  • Adjust the Cajun seasoning to suit your spice tolerance.
  • This dish pairs beautifully with cornbread or tortilla chips for dipping.
