Potatoes: 1 box Albert Bartlett Parmentier Potatoes (about 400g)
Camembert: Half a Camembert wheel (approximately 125g)
Puff Pastry: 1 sheet (roughly 300g)
Egg wash: 1 egg, beaten
Herbs:
1 teaspoon dried mixed herbs
Fresh thyme (for garnish)
Other:
1 tablespoon white sesame seeds
Sea salt, to taste
Drizzle of honey (about 1 tablespoon)
Instructions
Preheat oven: Preheat the oven to 220°C (fan 200°C / gas mark 7).
Cook potatoes: Place the Parmentier Potatoes on a baking tray and cook for 20 minutes, turning halfway through.
Prepare puff pastry: Slice the puff pastry into 12 even squares. Cut a 1cm border around each square, leaving the corners attached.
Egg wash: Lightly coat each pastry square with the egg wash.
Assemble: Top the center of each pastry square with a slice of camembert, some cooked Parmentier Potatoes, dried mixed herbs, and white sesame seeds.
Bake: Reduce the oven temperature to 180°C (fan 170°C / gas mark 4) and bake for 15-20 minutes, or until the pastry is golden and puffed.
Serve: Drizzle with honey and garnish with fresh thyme before serving.

Notes
If you prefer, you can add other herbs like rosemary or oregano for more flavor.
For a more indulgent version, use a full Camembert wheel, or add a bit of garlic to the potatoes.
