- 1 ripe avocado, peeled and mashed
- 4–6 slices fresh mozzarella
- 1/2 cup cherry tomatoes, halved
- Handful of fresh basil leaves
- 1–2 teaspoons balsamic glaze
- 1 teaspoon extra virgin olive oil
- Sea salt and cracked black pepper, to taste
Instructions
- Toast the sourdough slices until golden and crisp.
- Mash the avocado in a bowl and season with salt and pepper.
- Spread mashed avocado over each slice of toast.
- Layer mozzarella slices and cherry tomatoes on top.
- Add fresh basil leaves between tomato and cheese slices.
- Drizzle with balsamic glaze and olive oil.
- Sprinkle with a final touch of salt and pepper. Serve immediately.

- Use ripe avocados for the best texture and flavor.
- To make it spicy, add red pepper flakes or chili oil.
