- 2 cups crispy rice cereal
- 1/2 cup unsalted butter
- 1 cup brown sugar, packed
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 cups semisweet chocolate chips
- 1 tablespoon vegetable oil
Instructions
- In a large bowl, pour the crispy rice cereal and set aside.
- In a medium saucepan, melt the butter over medium heat. Add the brown sugar, heavy cream, vanilla extract, and salt. Stir constantly and bring the mixture to a simmer. Let it cook for about 3-4 minutes, stirring occasionally, until it thickens slightly.
- Pour the caramel mixture over the cereal and gently fold to coat the cereal evenly.
- Press the mixture into the bottom of a greased 9×9-inch baking pan to form an even layer. Let it cool slightly while preparing the chocolate topping.
- In a microwave-safe bowl, melt the chocolate chips and vegetable oil in 30-second intervals, stirring in between, until smooth.
- Pour the melted chocolate over the caramel crunch layer and spread it evenly with a spatula.
- Refrigerate the bars for at least 2 hours to allow the caramel to set and the chocolate to firm up.
- Once chilled, cut into squares and serve!
Notes
- You can drizzle extra caramel or chocolate on top for a decorative touch.
- Try adding chopped nuts or dried fruits to the cereal mixture for added texture and flavor.
