Ingredients
Scale
For the Tart:
- 1 pie crust, preferably homemade (blind baked)
- 4 large onions, sliced into ¼-inch rounds
- 1 tablespoon sugar
- ½ teaspoon kosher salt
- 1½ tablespoons balsamic vinegar
- 2 tablespoons fresh thyme, chopped (or 2 teaspoons dried thyme)
- ¼ teaspoon freshly ground black pepper
- ¼ cup heavy cream
- 1 cup Gruyere cheese, grated
Instructions
-
Blind Bake the Crust:
Prepare and blind bake your pie crust according to your recipe or follow the instructions in Lea Ann Brown’s Pie Crust Article. Let cool. -
Caramelize the Onions:
In a large frying pan, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions, sugar, and salt.
Cook, stirring often, until the onions reduce to about two-thirds of their original volume (approximately 30 minutes). If the pan seems dry, add a tablespoon of butter.
Stir in the balsamic vinegar and reduce the heat to low. Cook for another 15 minutes, stirring frequently, until the onions are golden brown and fully caramelized. -
Add Flavor:
Remove the pan from heat and stir in the thyme and black pepper.
Allow the mixture to cool slightly, then stir in the heavy cream until fully combined. -
Assemble the Tart:
Preheat the oven to 350°F (175°C).
Spread the caramelized onion mixture evenly into the blind-baked tart shell.
Sprinkle the grated Gruyere cheese evenly over the top. -
Bake:
Bake the tart in the preheated oven for about 15 minutes, or until the filling is set and the cheese is melted. -
Serve:
Let the tart cool slightly before serving.
Serve warm or at room temperature, garnished with a sprig of thyme if desired.
Notes
- For a richer flavor, you can add a tablespoon of butter when caramelizing the onions.
- You can substitute the Gruyere cheese with other cheeses like Emmental or Swiss if you prefer.
- This tart is perfect as a light lunch, appetizer, or side dish to complement a main course.
