- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 2 tbsp almond butter or cashew butter
Instructions
- Prepare the Ingredients: In a food processor, add the grated carrots, oats, shredded coconut, walnuts, and dates. Pulse until the mixture starts to break down.
- Add the Flavor: Add maple syrup (or honey), vanilla extract, cinnamon, nutmeg, salt, and almond butter. Blend until the mixture forms a sticky dough. If the mixture is too dry, add a little more almond butter or a teaspoon of water.
- Shape the Bliss Balls: Scoop out small portions of the mixture and roll them into bite-sized balls.
- Coat with Coconut: Roll each bliss ball in extra shredded coconut for a classic carrot cake look and texture.
- Chill and Serve: Place the bliss balls on a tray and refrigerate for at least 30 minutes to firm up before serving.
