Description

Golden, crispy cauliflower patties loaded with gooey cheese and savory herbs, perfect as an appetizer or meatless main dish.

Ingredients

  • Cauliflower Florets: 1 medium head (about 4 cups), steamed or roasted and finely chopped
  • Cheddar Cheese: 1 cup, shredded
  • Parmesan Cheese: 1/4 cup, grated
  • Eggs: 2 large
  • Breadcrumbs: 1/2 cup
  • Green Onions: 2 stalks, finely chopped
  • Garlic Powder: 1 teaspoon
  • Salt: 1/2 teaspoon
  • Black Pepper: 1/4 teaspoon
  • Olive Oil: 2 tablespoons

Instructions

  1. Heat a non-stick skillet over medium heat and drizzle with olive oil.
  2. In a bowl, mix the finely chopped cooked cauliflower with cheddar, parmesan, green onions, breadcrumbs, garlic powder, salt, and pepper. Add beaten eggs and stir until evenly combined.
  3. Add oil to the skillet and heat until shimmering but not smoking.
  4. Scoop out 2–3 tablespoons of the mixture and shape into patties. Place them gently in the skillet.
  5. Fry each cake for 3–4 minutes per side until golden and crisp. Cook in batches if needed.
  6. Transfer cakes to a plate lined with paper towels. Sprinkle with sea salt or parmesan if desired.
  7. Serve warm with sour cream, Greek yogurt, or herbs.

Notes

  • Drain cauliflower well to avoid soggy cakes.
  • Chill mixture before frying for better shaping and crispiness.
  • Use a non-stick skillet or sufficient oil to prevent sticking.
  • Reheat leftovers in oven or air fryer for best results.
