Indulge in this creamy and cheesy chicken spaghetti that’s perfect for family dinners! This comforting dish combines tender chicken and spaghetti with a rich cheese sauce, making it an instant favorite. 

Ingredients

  • 1 pound spaghetti, cooked and drained
  • 3 cups cooked chicken, shredded or cubed (rotisserie chicken works great)

For the Cheese Sauce:

  • 2 tablespoons unsalted butter
  • 1 medium onion, finely chopped
  • 1 small bell pepper (red or green), diced
  • 3 cloves garlic, minced
  • 1 (10.5 oz) can condensed cream of mushroom soup
  • 1 (10.5 oz) can condensed cream of chicken soup
  • 1 (10 oz) can diced tomatoes with green chilies (Rotel), undrained
  • 1 cup chicken broth
  • 1 teaspoon smoked paprika (optional)
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese

For Topping:

  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup crushed crackers (like Ritz) or breadcrumbs (optional)

Instructions

 

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).

  2. Cook the Pasta: Cook the spaghetti according to the package instructions. Drain and set aside.

  3. Prepare the Sauce: In a large mixing bowl, combine the cream of chicken soup, cream of mushroom soup, milk, sour cream, garlic powder, onion powder, salt, and pepper. Stir well until everything is evenly mixed.

  4. Add Chicken and Cheese: Add the cooked chicken, cheddar cheese, and mozzarella cheese to the mixture. Stir to combine.

  5. Combine Pasta and Sauce: Add the cooked spaghetti to the sauce mixture and toss until the pasta is evenly coated.

  6. Bake: Pour the pasta mixture into a greased 9×13-inch baking dish. Bake for 25-30 minutes, or until the cheese is melted and the top is golden and bubbly.

  7. Serve: Garnish with chopped green onions (if desired) and serve immediately.
