- 3 pounds Yukon Gold Potatoes, thinly sliced
- 3 large Yellow Onions, thinly sliced
- 4 tablespoons Butter
- 1 tablespoon Olive Oil
- 2 cloves Garlic, minced
- 1 teaspoon dried Thyme or 1 tablespoon fresh Thyme
- 1 cup Beef Broth
- 1½ cups Heavy Cream
- 1½ cups Gruyère Cheese, shredded
- 1 cup Mozzarella Cheese, shredded
- 1½ teaspoons Salt
- 1 teaspoon Black Pepper
- ½ cup Parmesan Cheese, grated
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- In a large skillet over medium heat, melt butter and olive oil. Add onions and cook for 25–30 minutes until caramelized. Add garlic and thyme in the last few minutes, then pour in broth and reduce slightly.
- Layer one-third of the potatoes in the baking dish. Add salt, pepper, cheeses, caramelized onions, and a splash of cream. Repeat for 3 total layers.
- Pour remaining cream over the top and finish with extra cheese.
- Cover with foil and bake for 35 minutes. Remove foil and bake for another 25–30 minutes until golden and bubbly.
- Let rest for 10–15 minutes before serving. Garnish with fresh thyme if desired.
Notes
- Use a mandoline for evenly sliced potatoes.
- Don’t rush the caramelization process — it’s key for flavor.
- Broil for the last 2 minutes for an extra crispy top.
