Tender zucchini halves filled with a rich, garlicky cheese mixture and baked until golden and bubbling—these Cheesy Garlic Zucchini Steaks are an irresistible low-carb comfort dish.


Ingredients

  • 4 medium zucchini, halved lengthwise
  • 1 ½ cups shredded mozzarella cheese
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • ½ cup grated parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon Italian seasoning
  • ½ cup cream cheese, softened


Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. In a bowl, mix cream cheese, mozzarella, parmesan, garlic, parsley, Italian seasoning, salt, and pepper until well combined.
  3. Slice zucchinis lengthwise and scoop out the centers to form boats.
  4. Brush zucchini halves with olive oil and place on the baking sheet.
  5. Fill each with the cheese mixture, smoothing the tops evenly.
  6. Bake for 20–25 minutes until zucchini is tender and cheese is bubbling.
  7. Broil for 2–3 minutes to brown the tops lightly.
  8. Remove from oven, garnish with parsley, and serve warm.
