Ingredients

Scale
  • 4 large russet potatoes, peeled and diced
  • 1 medium onion, diced
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup milk
  • 2 tablespoons butter, melted
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup green onions, sliced (for garnish)

Instructions

  • Grease the slow cooker with non-stick spray or butter.
  • Layer the diced potatoes and onions in the bottom of the slow cooker.
  • In a bowl, combine the shredded cheddar cheese, sour cream, milk, melted butter, garlic powder, salt, and pepper. Stir until the mixture is smooth.
  • Pour the cheese mixture over the potatoes and onions, stirring gently to combine.
  • Cover and cook on low for 4-5 hours, or until potatoes are tender.
  • Once done, stir the mixture again and garnish with sliced green onions.
  • Serve hot and enjoy your cheesy, comforting side dish!

Notes

  • For extra creaminess, you can add an additional 1/2 cup of sour cream or cream cheese.
  • If you prefer a crispier top, you can transfer the potatoes to a baking dish after slow cooking and bake them in the oven at 375°F for 10-15 minutes.
  • Feel free to add cooked bacon bits or a handful of chopped parsley for added flavor.
