These Cheesy Ranch Oven Roasted Potatoes are crispy on the outside, tender on the inside, and bursting with savory flavors from ranch seasoning, cheddar cheese, and Parmesan. Perfect as a side dish for any meal!

- 4 large russet potatoes, scrubbed and diced
- 1/4 cup olive oil
- 1 packet ranch seasoning mix
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley (optional)
- Salt and pepper to taste
Instructions

Preheat Oven:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. -
Prepare Potatoes:
In a large bowl, toss the diced potatoes with olive oil, ranch seasoning mix, salt, and pepper until evenly coated. -
Bake:
Spread the potatoes evenly on the prepared baking sheet. Roast for 25-30 minutes, or until golden and crispy, stirring halfway through. -
Add Cheese:
Sprinkle shredded cheddar cheese and grated Parmesan cheese over the potatoes. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly. -
Serve:
Transfer the cheesy ranch potatoes to a serving dish and sprinkle with chopped fresh parsley if desired.
Notes
For extra flavor, add some chopped bacon bits before serving.
