- 1 yellow onion, sliced into rings

- 1 ½ cups mild cheddar cheese, shredded

Instructions
- Preheat oven to 400°F (200°C). Lightly spray an 8×8-inch casserole dish with nonstick cooking spray.
- Arrange the sliced potatoes and onions in the prepared baking dish, alternating and staggering the layers.
- In a medium saucepan, melt the butter over medium heat. Add the flour and salt, stirring constantly with a whisk for about 1 minute. Slowly stir in the milk and cook, stirring occasionally, until the mixture thickens.
- Stir in the shredded cheddar cheese and continue to stir until the cheese melts and the sauce is smooth, about 30–60 seconds.
- Pour the cheese sauce evenly over the potatoes and onions, ensuring they are well coated. Cover the dish with aluminum foil.
- Bake for 85–90 minutes, or until the potatoes are tender.
- For a golden, crispy top, switch the oven setting to broil and broil for 2–3 minutes, or until lightly browned.
- Season with additional salt and pepper to taste and serve hot.
