Instructions

  2. Arrange the sliced potatoes and onions in the prepared baking dish, alternating and staggering the layers.
  3. In a medium saucepan, melt the butter over medium heat. Add the flour and salt, stirring constantly with a whisk for about 1 minute. Slowly stir in the milk and cook, stirring occasionally, until the mixture thickens.
  4. Stir in the shredded cheddar cheese and continue to stir until the cheese melts and the sauce is smooth, about 30–60 seconds.
  5. Pour the cheese sauce evenly over the potatoes and onions, ensuring they are well coated. Cover the dish with aluminum foil.
  6. Bake for 85–90 minutes, or until the potatoes are tender.
  7. For a golden, crispy top, switch the oven setting to broil and broil for 2–3 minutes, or until lightly browned.
  8. Season with additional salt and pepper to taste and serve hot.
