Ingredients

Scale

For the Chicken Cobbler:

  • 4 tablespoons salted butter, melted
  • 4 cups cooked chicken (cut into bite-sized pieces; rotisserie chicken works well)
  • 12 oz bag frozen peas and carrots
  • 3 teaspoons garlic powder
  • 3 teaspoons onion powder
  • ½ teaspoon black pepper
  • 1 can (10.5 oz) cream of chicken soup
  • 2 cups chicken broth
  • 1 box (11.36 oz) Cheddar Bay Biscuit Mix
  • 2 cups whole milk
  • ½ cup shredded cheddar cheese

For the Seasoned Butter Topping:

  • 2 tablespoons salted butter, melted
  • Seasoning packet from the Cheddar Bay Biscuit Mix box

For Serving:

  • Chopped fresh parsley (optional)

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
    • Grease a 9×13 inch baking dish with melted butter, spreading it evenly across the bottom of the dish.
  2. Layer the Ingredients:
    • Spread the cooked chicken in a single layer over the butter in the baking dish.
    • Evenly distribute the frozen peas and carrots over the chicken.
    • Sprinkle the garlic powder, onion powder, and black pepper over the vegetables. Do not stir; just layer the ingredients.
  3. Make the Soup Mixture:
    • In a mixing bowl, whisk together the cream of chicken soup and chicken broth until well combined and smooth.
    • Pour this mixture evenly over the chicken and vegetables, ensuring it covers the entire surface without stirring.
  4. Prepare the Biscuit Batter:
    • In another mixing bowl, combine the Cheddar Bay Biscuit Mix (reserve the seasoning packet for later), whole milk, and shredded cheddar cheese.
    • Pour the biscuit batter evenly over the chicken and vegetable layers. Do not stir; just spread it gently over the surface.
  5. Bake:
    • Bake in the preheated oven for 55-65 minutes or until the biscuit topping is golden brown and cooked through. The center may appear slightly runny but will thicken as it cools.
  6. Prepare the Seasoned Butter:
    • While the cobbler is baking, melt 2 tablespoons of butter in a microwave-safe bowl.
    • Stir in the seasoning packet from the Cheddar Bay Biscuit Mix.
  7. Finish the Dish:
    • As soon as the cobbler is done baking, brush the seasoned butter over the top of the biscuit layer for extra flavor.
    • Let the cobbler rest for 10-15 minutes after removing it from the oven to help the sauce thicken before serving.
  8. Serve:
    • Garnish with freshly chopped parsley before serving, if desired.

Notes

  • You can use rotisserie chicken to save time.
  • For a slightly spicier variation, add some crushed red pepper flakes to the soup mixture.
  • If you prefer a thicker filling, use less chicken broth or add a bit of cornstarch to thicken it.
