Chicken Divan with Mayo is a comforting casserole made with tender chicken, broccoli, a creamy mayo-soup sauce, and melty cheese. It’s easy, satisfying, and perfect for family dinners or meal prep.


Ingredients

  • 2 cups cooked chicken, chopped or shredded
  • 2 packages (10 oz each) frozen chopped broccoli, thawed
  • 2 cans (10.5 oz) cream of chicken or mushroom soup
  • 1 cup mayonnaise
  • 3 tablespoons lemon juice
  • 1 teaspoon curry powder (optional)
  • to 2 cups shredded cheddar cheese
  • Optional: 1/2 cup breadcrumbs or crushed crackers + 1 tbsp melted butter for topping
  • Salt and pepper, to taste


Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13 baking dish.
  2. Layer thawed broccoli on the bottom. Top with cooked chicken.
  3. In a bowl, mix soup, mayonnaise, lemon juice, curry powder, salt, and pepper.
  4. Pour sauce evenly over chicken and broccoli. Sprinkle with cheese.
  5. Top with optional buttered breadcrumbs or crackers.
  6. Bake for 30–35 minutes until bubbly and golden. Let rest 5 minutes before serving.

Notes

  • Use good quality mayo for better flavor.
  • Let the casserole rest after baking to allow the sauce to thicken.
  • Frozen broccoli should be drained well to avoid excess moisture.
