- 2 cups cooked chicken, chopped or shredded
- 2 packages (10 oz each) frozen chopped broccoli, thawed
- 2 cans (10.5 oz) cream of chicken or mushroom soup
- 1 cup mayonnaise
- 3 tablespoons lemon juice
- 1 teaspoon curry powder (optional)
- 1½ to 2 cups shredded cheddar cheese
- Optional: 1/2 cup breadcrumbs or crushed crackers + 1 tbsp melted butter for topping
- Salt and pepper, to taste
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 9×13 baking dish.
- Layer thawed broccoli on the bottom. Top with cooked chicken.
- In a bowl, mix soup, mayonnaise, lemon juice, curry powder, salt, and pepper.
- Pour sauce evenly over chicken and broccoli. Sprinkle with cheese.
- Top with optional buttered breadcrumbs or crackers.
- Bake for 30–35 minutes until bubbly and golden. Let rest 5 minutes before serving.
Notes
- Use good quality mayo for better flavor.
- Let the casserole rest after baking to allow the sauce to thicken.
- Frozen broccoli should be drained well to avoid excess moisture.
