These cheesy chicken taquitos are a flavorful and crispy Mexican-inspired snack or meal. Filled with creamy chicken, spinach, and spices, they can be baked or fried and are perfect for dipping in salsa or guacamole.

  • 2 cups cooked shredded chicken (rotisserie recommended)
  • 6 ounces cream cheese, softened
  • 1/4 cup salsa (any variety)
  • 1/4 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup baby spinach leaves, chopped
  • 1/4 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon chili powder
  • Salt and freshly ground black pepper, to taste
  • 1520 corn or flour tortillas

Instructions

  1. In a large mixing bowl, combine softened cream cheese, salsa, and sour cream until smooth.
  2. Add the shredded chicken, cheddar cheese, chopped spinach, and spices. Stir until well mixed. Taste and adjust seasoning as needed.
  3. If using corn tortillas, warm them on a non-stick griddle over medium-high heat for 15–30 seconds per side until soft and pliable. Keep warm under foil.
  4. Place a spoonful of the chicken mixture along the center of each tortilla and roll tightly. Secure with a toothpick if needed.
  5. Baking Method: Preheat oven to 425°F (220°C). Place rolled taquitos on a baking sheet. Lightly spray or brush the tops with oil. Bake for 15–20 minutes until golden and crispy.
  6. Frying Method: Heat 1.5 inches of oil in a large skillet over medium-high heat. Once hot, fry taquitos in batches, turning to cook all sides, until golden brown. Drain on paper towels.
  7. Serve hot with guacamole, salsa, or sour cream for dipping.
