Description
These cheesy chicken taquitos are a flavorful and crispy Mexican-inspired snack or meal. Filled with creamy chicken, spinach, and spices, they can be baked or fried and are perfect for dipping in salsa or guacamole.

- 2 cups cooked shredded chicken (rotisserie recommended)
- 6 ounces cream cheese, softened
- 1/4 cup salsa (any variety)
- 1/4 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup baby spinach leaves, chopped
- 1/4 teaspoon cumin
- 1/4 teaspoon garlic powder
- 1/4 teaspoon chili powder
- Salt and freshly ground black pepper, to taste
- 15–20 corn or flour tortillas
Instructions
- In a large mixing bowl, combine softened cream cheese, salsa, and sour cream until smooth.
- Add the shredded chicken, cheddar cheese, chopped spinach, and spices. Stir until well mixed. Taste and adjust seasoning as needed.
- If using corn tortillas, warm them on a non-stick griddle over medium-high heat for 15–30 seconds per side until soft and pliable. Keep warm under foil.
- Place a spoonful of the chicken mixture along the center of each tortilla and roll tightly. Secure with a toothpick if needed.
- Baking Method: Preheat oven to 425°F (220°C). Place rolled taquitos on a baking sheet. Lightly spray or brush the tops with oil. Bake for 15–20 minutes until golden and crispy.
- Frying Method: Heat 1.5 inches of oil in a large skillet over medium-high heat. Once hot, fry taquitos in batches, turning to cook all sides, until golden brown. Drain on paper towels.
- Serve hot with guacamole, salsa, or sour cream for dipping.
Notes
- For a spicier kick, use a hot salsa or add chopped jalapeños.
- Make ahead and freeze unbaked taquitos for quick meals later.
- Use low-fat cream cheese and sour cream for a lighter version.
- To air fry, cook at 400°F for 8–10 minutes until crispy, turning halfway.
