Ingredients

Scale
  • 1 cup unsweetened cocoa powder
  • 1 ½ cups granulated sugar
  • ½ cup vegetable oil
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup powdered sugar (for rolling)

Instructions

  • Mix Wet Ingredients:
In a large bowl, whisk together cocoa powder, sugar, and vegetable oil until combined.
Add eggs one at a time, mixing well after each addition.
    Stir in vanilla extract.
  • Combine Dry Ingredients:
In a separate bowl, whisk together flour, baking powder, and salt.
  • Make the Dough:
Gradually add the dry ingredients into the wet mixture, stirring until a thick dough forms.
Cover and refrigerate for at least 2 hours (or overnight) to make it easier to handle.
  • Preheat & Prep:
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Place powdered sugar in a shallow bowl.
  • Shape & Coat:
Scoop tablespoon-sized portions of dough and roll into balls.
Roll each ball generously in powdered sugar, coating completely.
Place on the baking sheet 2 inches apart.
  • Bake:
Bake for 10-12 minutes, until cookies puff up and crack but are still soft in the center.
  • Cool & Enjoy!:
Let cookies cool on the pan for 2 minutes, then transfer to a wire rack.
Serve warm or store in an airtight container for up to a week.

Notes

  • For extra fudgy cookies, slightly underbake them and allow them to cool on the baking sheet.
  • You can add chocolate chips to the dough for extra chocolatey goodness.
  • These cookies make great gifts and are perfect for holiday cookie exchanges.
