This Chocolate Espresso Zucchini Bread is the perfect balance of rich chocolate flavor, a hint of espresso, and the moistness of zucchini. It’s a delicious treat that’s perfect for breakfast, dessert, or any time you need a pick-me-up!

  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp instant espresso powder
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 2 cups grated zucchini (about 2 medium zucchinis)
  • 1 cup semi-sweet chocolate chips (plus extra for topping)

Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C) and grease or line a 9×5-inch loaf pan with parchment paper.
  • Mix the Dry Ingredients: In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, and espresso powder. Set aside.
  • Mix the Wet Ingredients: In a separate bowl, whisk together the granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth.
  • Combine the Zucchini: Stir the grated zucchini into the wet mixture. The moisture from the zucchini will help keep the bread tender and moist.
  • Combine the Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
  • Add the Chocolate Chips: Fold in 1 cup of chocolate chips into the batter.
  • Bake the Bread: Pour the batter into the prepared loaf pan and spread it out evenly. Top with the remaining chocolate chips for extra chocolatey goodness. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean (except for melted chocolate).
  • Cool and Serve: Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

You can add extra chocolate chips on top for more chocolatey goodness! If you prefer a sweeter bread, increase the amount of sugar to suit your taste.
